Recipe Tuesday:Quinoa, Turkey, Asparagus Bowl

Sometimes I get a wild hair up my a#* and make random meals.  I'm actually really good at just throwing things together without thinking about it.  Yesterday I was starving and needed some healthy food, so i threw this together and it was yummy and it made enough for 6 meals!


Quinoa, Turkey, Asparagus Bowl

1/2 cup quinoa-uncooked
1 cup water
1 8 oz can of tomato sauce
1 lb ground turkey
a bundle of asparagus-you could use any vegetable
1 clove garlic
Mrs. Dash
Pepper

Put the quinoa, water and tomato sauce in a pan. Bring it to a boil then simmer until all the liquid is gone.  While that is cooking brown the turkey with the garlic.  Add the asparagus, spices and quinoa mixture together at the end.  This took 20 minutes and was so good and easy!

 

Bridal Showers and Breweries

This weekend was definitely a fun one!

Friday started with my IRL BFF Nicole driving out here to get her hair did.  I didn't take pics because she would probably kill me!
We drank some wine and caught up, it was great!
Then I had to take Marcus to an event at the rec center.  Hours after wine and an indoor pool=hell.  Seriously, longest 45 minutes ever!!

Saturday we got up early and loaded the car for Christy's bridal shower.  

I will just show you in pictures. Everything turned out great and the bride loved it!!

After the shower we decided to have an after party haha so we ended up at Coors Brewery.  I had never been on their beer tour and everyone thought I was crazy and needed to experience it.

Free beer you say?? Hell yes

We got there about a half hour before they closed so in order to get our free beer we had to chug the beer in line while waiting for our next one.  It was interesting lol

Then we went to another local brewery.  I didn't get any pictures.  It was kind of a weird place, there were families everywhere.  It kind of felt like a family reunion in some one's backyard, awkward.

We then went to karaoke with McKennon's fabulous grandparents.  I have pics but they would probably hate them on the internet!

Sunday was shitty.  I picked up Marcus, headed home and pulled into the grocery store.  I got out and heard one of my tires deflating f*#k!  I got some fix a flat and prayed it would hold until today because of course that shit always happens to me on a Sunday when nothing is open.  

The fix a flat lasted all day until about 5.  I called my roadside assistance to come fix it and they were going to charge me 150 dollars...ouch.  Pops to the rescue.  The same guy that came and fixed my yard was coming over to get this massive tv in my basement and get rid of it.  Him and his brother in law (we will get to the awkwardness of that later) my two knights in shining armor.  They changed my tire and then we took it to their garage and they fixed it.  They saved me 150 dollars wooo.

So Brother in law=Butterflies.  I haven't felt those in years.  It figures it would happen when we are moving away from here lol If it weren't for bad luck I wouldn't have any luck at all!

Lol yep that's called Analisa doesn't know how to take a hint!

Progress Not Perfection

For the last 7-8 weeks I have been doing a personal workout plan and have loved it.  I have been eating clean maybe 80% of the time and trying to be active as much as possible.  I admit working out is hard, I would much rather sit on the couch and watch NCIS like I always do lol  Sometimes I get on IG and see all these amazing ladies and how hard they work and I get my ass off the couch and just do it!  Once I start it is so easy and truthfully I have a hard time stopping!

I posted a progress pic on IG the other day and everyone was so great and supportive.  I can't tell much of a difference when I look at the pictures myself but I can feel it in the way my clothes fit and the way I feel in general!  I have a ways to go before I get to my goals but progress not perfection right?! It isn't easy but will be worth it!

First let me just say that it doesn't matter if you are 500 pounds or 100 posting pictures of yourself on the Internet is nerve racking.  So be nice!!

I see the most progress in my stomach, which let's face it is the most important!

Sorry for the up close and personal.  I thought everyone wanted to see my butt that close lol  I have always had a nice ass (Did I just compliment myself? shock!)  but with all those squats it just keeps getting better!

 First thing you would do/buy if you won the lottery-Pay off all my debt and my family's debt.  Yes I am one of those people that would be practical with my money.  No getting crazy buying fancy cars lol  I would also go on a vacation somewhere I've always wanted to go....Ireland or the Virgin Islands....maybe both?!





 First person you call when you get amazing news- What is amazing news? I haven't experienced that in awhile lol Probably my dad though. 


First thing you do when you've had a bad day- Have a drink. Don't judge me lol I am not an alkie, just like to drink sometimes.

The Weekend of Packing

Boring I know!

Friday-  I didn't have any wine but had some vodka so that was what was for dinner...
It was delicious too!
Saturday- Marcus and I kicked some ass packing....as in got almost all of it done.  We aren't ready to move or anything.

I made this sign for one of my many sisters for her wedding present.  It doesn't matter that her wedding was in August does it??

I always wanted to make one and after making this one I might go sign making crazy haha It looks much better in person I promise!

At Marcus' baseball practices I am lucky enough to get to visit with one of the kid's grandpas.  He is great company and lucky for me when my realtor called the other day to tell me there were some repairs that need to be done on our house he was sitting right there and offered to do them for free. He is a serious life saver!  He got out there Saturday with his bobcat and covered my yard with dirt!  There was a part he couldn't get to and the three of us ended up doing it by hand.  I was regretting that on Sunday.

It was so beautiful outside, so when he left I went for a run and did some legs...ouch.

Sunday- We woke up and I loaded up my car tetris style.  A movie cabinet and about 25 boxes. 

I went for another run, packed some more and by noon I couldn't walk anymore.  Yep Fibromyalgia rearing it's ugly head.  My fault for doing too much.  I then layed on the couch and watched depressing shows and movies.  Stupid romantic comedies aka women porn lol I was fully expecting the love of my life to show up at the door and we lived happily ever after haha only in the movies!

Oh and did I mention I read this awesome book (Steph add it to your list)

Recipe Tuesday: Turkey Sausage and Zucchini Pasta and No Flour Pancakes

Before I do anything I need to talk about Boston.  It is a shame that people work so hard to run a marathon and someone wanted to ruin that.  The only good thing about tragedy is the way people come together and help each other.  They are willing to sacrifice themselves by running toward an explosion instead of away.  People become selfless and helpful in times of need.  My thoughts and prayers are with the people and family of those affected yesterday.

Yesterday I did some quick meal prep and came up with two random recipes.

Meal Prep

  • Boiled eggs-I add a tsp of baking soda and boil for 20 minutes, the baking soda helps the shell come off easily.  I tried that whole bring it to a boil and let it sit for 20 minutes and let me tell you the yolk will not cook!

  • Chocolate chip oatmeal cookies-1 Cup Oatmeal, 2 bananas, 1/2 cup chocolate chip.  Mash the banana and oats together, add chocolate chips. Form into balls, should make 12. Bake at 350 for 12-15 minutes. Great for a sweet tooth





    • Turkey Sausage and Zucchini Pasta
    • Pancakes-lots of pancakes
    This took about 2 hours and only because I made 17 pancakes, 1 at a time.  I had already packed my other big pan oops! It probably would have only took me an hour otherwise.


    Turkey Sausage and Zucchini Pasta

    • 8 oz Smoked Turkey Sausage-Cut into quarter sized pieces
    • 1 Can Diced tomatoes
    • 4 Cups water or Chicken broth
    • 6 oz pasta of your choice-I used Smart taste Rotini
    • 1 medium Zucchini-cut up
    • 1 Tbsp Pepper
    • 2 Tbsp Mrs. Dash
    • 1/4 Bell pepper-I had this in the freezer
    • 1 clove garlic
    • 1 Tbsp Olive Oil
    • 2 Tbsp Onion powder
    Heat Olive Oil in a big pan (it has to be big enough to fit all of these ingredients) add the garlic, bell pepper and sausage.  When the sausage starts turning brown add the tomatoes, water and spices.  Bring it to a boil then add the pasta.  Turn it down to low.  I know it is weird to add pasta then turn it down but trust me this is how you get the flavor!  When the pasta is halfway done add the zucchini.  That's it.  This should make about 6 servings at 163 calories each.
    Looks yummy doesn't it?

    I don't know about you but I love pancakes!  I do not like the crash I get after eating them though.  I made some cottage cheese pancakes once before and discovered they actually filled me up and kept me full! yesterday I found two different protein pancake recipes and decided to just make up my own.

    No Flour, Protein Pancakes
    • 8 egg whites
    • 1 1/2 cup oatmeal
    • 1 banana
    • 1 tsp vanilla
    • 1 1/2 cups cottage cheese- I used lactose free
    • 1 tsp cinnamon
    • 1/4 tsp baking soda
    Blend all the ingredients together and use 1/4 cup to make your pancakes.  This made 17 for me but I also made them really big.  Feel free to half it or even freeze some of them.  This is easy to warm up in the mornings for a quick breakfast.  It has a whopping 8 grams of protein in each pancake and only 59.5 calories in each.
    I am not a fan of syrup so today I warmed up 1/2 an apple, smashed it and added it to the pancakes.  Good stuff!
